Fresh in the Garden, Soneva Fushi


Our CEO Louis Thompson worked in close collaboration with the island owners and the Soneva project team to create an edible landscape and sustainable infrastructure around the iconic Fresh in the Garden restaurant. The project featured an extensive organic mandala vegetable garden, a composting toilet overlooking the Indian Ocean, a rope bridge spanning a banana plantation to access the restaurant, a mushroom hut and laboratory.
